Easy Coffee Cake in a Mug Recipe

No. Just, no.
I know that I’m late on the cake in a mug bandwagon…but WOW. I mean, WOW! It’s just mind blogging to think I can make enough coffee cake for me, just ME! Extra crumble, please! And for once, this mom isn’t sharing. So in case you’re needing a little mom S.O.S., make this Easy Coffee Cake in a Mug Recipe. Perfect size dessert for one….with extra crumble for your hard work!
So when I started searching mug cakes I was pretty siked at the idea of being able to make a perfect slice of cake for one. I mean, who wants to go through the trouble of making an entire cake? My mommy schedule doesn’t have time for that!
But as I read through the ingredients I came to a screeching halt. Sour Cream. Yuck! I know there’s folks that would bathe in the stuff, but for me, it’s a complete turn-off…like cheap 80s White Diamonds perfume kind of turn-off. So I immediately needed to remedy the situation because crumble was calling my name. So here it is. Your easy coffee cake in a mug recipe – no sour cream to be found.
Easy Coffee Cake in a Mug Recipe
Ingredients
- 1 TBSP Butter
- 2 TBSP Granulated Sugar
- 1/2 beaten egg
- 2 TBSP Vanilla Yogurt
- 1/4 Cup Flour
- 1/8 TSP Baking Powder
- 2 TBSP Flour
- 1 TBSP Brown Sugar
- 1 TSP Cinnamon
- 1 TBSP Butter
Instructions
- Place 1 TBSP of butter in your coffee mug (average 6 oz. mug works fine!). Microwave for about 10-15 seconds until softened (NOT melted).
- Mix in 2 TBSP of sugar and 1/2 beaten egg.
- Stir in 1/4 cup flour, vanilla yogurt, and 1/8 TSP baking powder. Voila! You already have an amazing cake in a mug ready to go. But now...the best part.
- In a small bowl, mix together 2 TBSP flour, 1 TBSP brown sugar and 1 TSP cinnamon until well combined. Add 1 TBSP butter and mix well until you get coarse crumbles (yup, I use my hands!).
- Pour crumbles on top of your cake.
- Microwave for about 1 minute then 10 second increments until cake is fully cooked.
Because I couldn’t let half an egg go to waste, I totally made another mug too….for my husband, of course. Super moist, covered in crumble and paired with a mug of my favorite coffee, it’s the end of the day fix that was totally worth it. Crumble in a mug and romantic comedy movie kind of worth it.

Just curious—No where in the instructions does it say to use the yogurt (or am I just missing it). Are you suppose to use it?I know you don’t like sour cream, but could you sub it for the yogurt? This looks really good. Thanks!

Hi Maureen, yes in the cake portion of the mug! It’s in the instructions, but I just put “yogurt.” I’ll update to say vanilla yogurt 🙂 And you could totally sub sour cream for yogurt, I would just also add a couple of drops of vanilla extract for cake flavoring!
