I’m feeling nostalgic this weekend. Mother’s Day is right around the corner, and I’ve been thinking about brunch with my mom. If I could make her brunch, what would I make? This. Definitely this. Being vegetarian, I’ve seen her struggles with eating meals over the years. So of course, I had to make a vegetarian friendly breakfast idea that we could share together.
I love this recipe because I always seem to have leftover French bread after a dinner party. I hate to waste food. So I can easily re-perk this old loaf with fresh garlic bread and fresh avocado. Who knew this would be an amazing breakfast combo, right? But seriously, these flavors are perfect together for the right savory breakfast effect. Don’t skip out on the fresh garlic, just don’t.
In the midst of my daily chaos, I have been finding joy in the little things, like kitchen gadgets. Little devices that making cooking just a tad bit simpler, it makes me feel like I get a few lost minutes of day (you know, those minutes of distinguishing tantrums and cleaning crayon off the walls). Can I tell you about the amazing new garlic press that has rocked my world? This nifty kitchen gadget is just what a mom like me needs.
The Garject from Dreamfarm has you pressing, mincing, scraping and ejecting garlic cloves at a blink of an eye, ALL without pre-peeling the clove. Genius, I tell you. And with this homemade garlic bread as a KEY flavor component in this recipe, I’m winning the battle against fresh garlic.
Another kitchen gadget that made this dish possible? Smood. Yes, that’s totally a thing. Smood, also from Dreamfarm. I smash, mash and scrape my avocado – just like The Hulk would (or so I’d like to think). A simple press down has me on the way to the fresh avocado topping to this recipe. Nifty, right?
Ok, ok. Let’s get to the important business. The recipe. Here’s my winning breakfast dish, all with love for you.
Easy Avocado Toast with Egg
Ingredients
- Leftover French Bread cut into 1 inch thick slices - about 8 pieces
- 2 Cloves of Fresh Garlic pressed and minced
- Butter
- 1 Avocado
- 1/2 TSP Lemon Juice
- Pinch of Salt & Pepper
- 8 Eggs
- Paprika for garnish
Instructions
- Preheat oven to 425 degrees F.
- Spread butter on top of bread slices. Add fresh garlic.
- Heat on shallow baking tray for about 5-7 minutes or until crusty.
- Mash avocado, lemon juice, salt and pepper in small bowl.
- Top crusty garlic bread with avocado mixture.
- Prepare eggs in your favorite style. I did sunny side up for presentation, but I also fried in a heart shaped cookie cutter for an "awww" effect.
- Place cooked eggs on top of avocado toast.
- Serve immediately.
So as I stuff devour politely eat the results, I’m reminiscing about breakfasts with my mom. I cannot wait to make this dish with her as we sip coffee, laugh and eat together.
