“Don’t forget my love note!” (Ok, I admit that I kind of love that she loves her little notes from Mommy. )
PB&J just won’t cut it for this little foodie, but I’m not afraid of a little school lunch challenge. Borrowing a little inspiration from my daughter’s favorite utensil, we’re taking chopsticks to kindergarten this year.

Maybe it’s the Asian part of me, but I don’t mind using a little cucumber sushi inspiration to make lunches more fun for my little girl. She definitely needs ALL of the nutritious calories she can get for her big kindergarten year.

So heading to my local grocery store, I grabbed some fresh Boar’s Head Meat and Cheeses from our deli to fuel my daughter’s growing brain. Sweet ham and cheese is always a winning kid-friendly combo. Kid Friendly Cucumber Sushi Recipe for Back-to-School
Healthy, colorful and fun – when I pack chopsticks in my girl’s lunchbox, you know it’s going to be a good lunch! What I love about this kid friendly cucumber sushi recipe is that it’s packed with lots of flavors that my daughter loves – sweet ham, creamy cheese and a big crunch!
Gluten free and sandwich free, it’s a great finger food alternative to the “usual” school lunches and allergy friendly too!
Ready to kick your lunchbox up a level?
What You Will Need:
- 2-3 Slices of Boar’s Head Maple Glazed Honey Coat® Ham
- 2-3 Slices of Boar’s Head American Cheese, white
- (1) Fresh Cucumber
- Handful of fresh matchstick carrots
- Optional: toasted sesame seeds for garnish
Directions:
- Slice cucumber into large ¾-1 inch thick slices (removing peel if desired).
- Hollow out center of cucumber using a melon baller. Leave about ½ inch of cucumber from the edges.
- Stuff cucumber with small rolls of ham, cheese and carrots until center is filled.
- Garnish with toasted sesame seeds if desired.
- Serve cold. Refrigerated leftovers in tightly sealed container.
These kid friendly cucumber sushi rolls are a perfect sandwich-free lunch idea. My daughter definitely approves! Whether using little fingers or little chopsticks with her school bento box, we’ve got a fresh new school lunch for kindergarten.
Now if we can get her to agree on school appropriate wardrobe choices…
