Gluten Free Funfetti Mug Cake Recipe
Who says that sprinkles are only for birthdays? Every now and then the kid in me is jumping up and down at the sight of sprinkles, jimmies, or those amazing and colorful pieces of candy goodness that reminds me that there’s still FUN in the world. I mean how could you not look at an amazing dessert covered in sprinkles and NOT smile? So as I was cleaning out my pantry, I found them. These beautiful Easter Sprinkles were calling my name, begging to be eaten. How could I say no?
So, a Funfetti party was underway! I knew all of the gluten-free folks were giving me the “eye” when I made my first mug cake, so this mug cake ifsfor you. A Gluten Free Funfetti Mug Cake that’s full of birthday fun for any day of the week….yes, moms, I’m talking to you! All of the sweet party fun without the hard work or messy clean up, it’s the pat on the back for a job well done. Hey, we’re worth it! Ready to see how EASY it is to make a sprinkle-riffic cake in a mug?
Gluten Free Funfetti Cake in a Mug Recipe
Ingredients
- 1 TBSP Butter
- 2 TBSP Granulated Sugar
- 1/2 beaten egg
- 2 TBSP Vanilla Yogurt
- 1/4 Cup Gluten Free Flour
- 1/8 TSP Baking Powder
- Sprinkles - at LEAST 1 TBSP
Instructions
- Place butter in your mug. Microwave 10-15 seconds on high until softened (not melted).
- Stir in sugar, egg and yogurt until well combined.
- Add flour, baking powder and sprinkles. Stir until mixed.
- Microwave on high for 1 minute. Than in 10 second intervals until cake is done.
So moist, so perfectly sized, so sprinkle-ized (yes, that’s my official word), I may or may not have added extra sprinkles to my mug…because it’s a dose of happiness! Sprinkles, cake and ALL just for me in 6 minutes or less, just give me a couple of minutes to reward myself with awesomeness.

What a fun idea and would make a great gift for someone for their birthday or retirement. Put the dry items in a mug and directions for what else to add and all set for a cute gift.
