Chocolate Raspberry Popsicles with Pistachio Crumble Recipe
Did I have you at popsicles too? This sweet, tart, savory and crunchy popsicle recipe definitely has got me like WOAH! This healthy spin on a sweet treat is great for families too – featuring fresh summer raspberries and packed with protein too!
Chocolate Raspberry Popsicles with Pistachio Crumble
Ingredients
- 2 Cups Vanilla Yogurt
- 1/4 Cup Fresh Raspberries like Driscolls
- 1/4 Cup Dark Chocolate chopped
- 1 TSP Coconut Oil
- 1/4 Cup Fresh Pistachios like Wonderful PIstachios, chopped
Instructions
- Blend together Vanilla Yogurt and Fresh Raspberries. Pour into popsicle mold.
- Freeze for 4-5 hours, or until firm.
- Combine chocolate and coconut oil in microwaveable bowl. Microwave in 30 second intervals, stirring between heatings, until smooth.
- Dip or drizzle popsicle with chocolate mixture. Top with chopped pistachios.
- Serve immediately.

I love making popsicles, and I can see from the recipe it isn’t hard to jazz them up a bit. I’d love to try this if I can get a decent deal on raspberries. We used to pick them wild as kids, and they are so expensive. But they are my favorite berry. These look so good, and good for you, too, yet totally delish.
