Tea is my mommy reset button these days. There’s never a day too long or too hot for a cup of tea in my humble opinion. And with summer here, I’m pulling out the big guns. Chai.
A little sweet meets a little spicy for the season – and also serves as the perfect inspiration for my Chai Chocolate Chip Cookie Ice Cream Sandwiches. Grab your Chai Latte, your ice cream scoop and this ultimate summer cookie recipe and welcome summer with open arms. Hello, summer. You’re looking tasty.

So it’s no wonder that my favorite summer drink has inspired my latest summer indulgence as well. Chai Latte meet my Chai Chocolate Chip Cookie Ice Cream Sandwiches. I couldn’t have planned a better no-guilt mom moment. Here’s how to make my latest summer inspired recipe:
Chai Chocolate Chip Cookie Bowls
- 2 1/4 Cups of Flour
- 1 TSP Baking Soda
- 1 TSP Salt
- 1 Cup Packed Brown Sugar
- 1/2 Cup Sugar
- 1 Cup 2 sticks Butter, softened
- 2 TSP Vanilla Extract
- 1/2 TBSP Cinnamon
- 1/2 TSP Cardamom
- 1/4 TSP Ground Cloves
- 1/4 TSP Ground Ginger
- 2 Eggs
- 2 Cups Chocolate Chips
- Ice Cream
- Preheat oven to 375 degrees F.
- In small bowl, combine flour, baking soda and salt.
- In large bowl, beat brown sugar, sugar, butter, vanilla, cinnamon, cardamom, cloves, and ginger until creamy.
- Add eggs, one at a time, beating well after each egg addition.
- Gradually beat in flour mixture.
- Stir in chocolate chips.
- Drop by rounded teaspoonfuls on ungreased baking sheets.
- Bake about 9-11 minutes or until golden brown.
- Cool completely on wire racks.
- When completely cool, place a scoop of ice cream in between 2 cookies. Press together to make an ice cream sandwich.
- Serve immediately
