So it’s no wonder that my favorite summer drink has inspired my latest summer indulgence as well. Chai Latte meet my Chai Chocolate Chip Cookie Ice Cream Sandwiches. I couldn’t have planned a better no-guilt mom moment. Here’s how to make my latest summer inspired recipe:
Chai Chocolate Chip Cookie Bowls
Ingredients
- 2 1/4 Cups of Flour
- 1 TSP Baking Soda
- 1 TSP Salt
- 1 Cup Packed Brown Sugar
- 1/2 Cup Sugar
- 1 Cup 2 sticks Butter, softened
- 2 TSP Vanilla Extract
- 1/2 TBSP Cinnamon
- 1/2 TSP Cardamom
- 1/4 TSP Ground Cloves
- 1/4 TSP Ground Ginger
- 2 Eggs
- 2 Cups Chocolate Chips
- Ice Cream
Instructions
- Preheat oven to 375 degrees F.
- In small bowl, combine flour, baking soda and salt.
- In large bowl, beat brown sugar, sugar, butter, vanilla, cinnamon, cardamom, cloves, and ginger until creamy.
- Add eggs, one at a time, beating well after each egg addition.
- Gradually beat in flour mixture.
- Stir in chocolate chips.
- Drop by rounded teaspoonfuls on ungreased baking sheets.
- Bake about 9-11 minutes or until golden brown.
- Cool completely on wire racks.
- When completely cool, place a scoop of ice cream in between 2 cookies. Press together to make an ice cream sandwich.
- Serve immediately
