It’s the perfect culmination of everything we love: the sweetness of candy, the healthier snack option, and the use-up-the-fruit-before-it-spoils S.O.S. plan. And with back-to-school here, I’m taking every opportunity to give my kids more of the homemade goodness than the packaged stuff. So today, I’m sharing my Easy Fruit Leather Recipe for Banana Nectarine Roll Ups, a perfect combo for school snacking!
One thing that you can always find an abundance of in my house is fresh fruit. We love having fresh fruit for snacking at any time of the day. But you know how it goes, there are busy schedules and rotting fruit to contend with. And it always brings a sad face to throw away once perfectly good fruit.
So instead of spoiling, I’m creating! Our fruit is getting a face lift this fall season with easy fruit leather recipes.
This sticky, sweet and perfectly packed school snack option works wonders in our bento box lunches. And the best part? It keeps well…really well. Like up to a month (if it lasts that long). Easy Fruit Leather Recipe for School Lunches | Banana Nectarine Roll Ups
Ingredients
- 2 Ripe Medium/Large Bananas peeled
- 2 Ripe Medium/Large Nectarines peeled
- 1 TBSP Honey
- 1 TBSP Lemon Juice
- Parchment Paper
Instructions
- Preheat oven to 200 degrees F.
- Using a blender, puree together the bananas, nectarines, honey and lemon juice until smooth
- Using a large cookie sheet, spread out your parchment paper to cover the entire bottom of the pan.
- Spread your fruit mixture on top of the paper, thin and even until entire bottom of pan is covered
- Bake for 3-5 hours, or until set and dry, with most of the stickiness gone.
- Cut strips of fruit leather (attached to the parchment paper if desired) to your desired snack size.
- Store in an airtight container up to one month.
