Lemon Bars with a Pumpkin Spice Crust
Fall is a-baking in our kitchen! Can you smell it? With fall flavors on the taste buds and the holiday season around the corner, I’m gearing up for a busy baking season with my latest delicious recipe combination, Lemon Bars with a Pumpkin Spice Crust. YES!
These are the most delicious lemon bars EVER! Didn’t think lemon and pumpkin spice could be so heavenly together? Just wait! This fall twist on a classic recipe has been made EASIER with the amazing kitchen gadgetry of KitchenIQ! The latest in kitchen tool technology and a sweet dessert? I know, I can barely stand all of the action on the blog today. So check out my latest KitchenIQ party and the perfect unique recipe for the holiday season.
Truth be told, I have an addiction to kitchen tools. Give me a super fun and easy to use nifty item for my kitchen, and I will be in baking heaven. Seriously. So when KitchenIQ gave us a Par-Tay to try out the latest in kitchen gadgets, I couldn’t wait to get my hands on some seriously clever tools.
Add my amazing family members and some delicious food, and we were ready to zest our way into a fun night in. How did KitchenIQ make our night in the kitchen a fabulous party?
The Edge Grip Knife Sharpener
Confession, I am HORRIBLE at sharpening our knives. If you had looked at our poor poor knife set that we got from our wedding registry, you’ll see how much I destroyed the blades while attempting to sharpen by hand. The Better Zester
Hands down this was the tool of the evening. With the KitchenIQ Better Zester in one hand and a fresh lemon in the other, we were conquering the kitchen, one zest at a time. Pumpkin Spice Crust Lemon Bars Recipe
Zesting all of those lovely lemons definitely inspired my latest recipe concoction. Fall and lemons? ABSOLUTELY! And with 1 tablespoon of lemon zesting perfected in just a few seconds, how could I resist making these melt-in-your-mouth lemon bars? I know. You’re so welcome. So here’s the most amazing lemon bars recipe…like ever.
Pumpkin Spice Crust Lemon Bars
Ingredients
Crust
- 2 cups of finely crushed ginger snaps
- 1/2 cup of powdered sugar sifted
- 1 tsp. pumpkin pie spice
- 3/4 cup butter
Filling
- 4 slightly beaten eggs
- 1 1/2 cups of granulated sugar
- 3 TBSP all purpose flour
- 1 TBSP finely grated lemon peel
- 3/4 cup lemon juice
- 1/4 cup whole milk
- powdered sugar for dusting
- Aluminum foil
- Cooking spray
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine ginger snaps, powdered sugar, and pumpkin pie spice. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Press mixture into the bottom of an aluminum foil lined 13x9x2 inch baking pan that has been sprayed with cooking spray. Bake at 350 degrees F for 18-20 minutes or until edges are brown/crispy.
- Meanwhile, in a medium bowl mix together eggs, granulated sugar, 3 TBSP flour, lemon peel, lemon juice and milk. Pour filling over HOT crust
- Bake 15-20 minutes or until center is set. Cool on wire rack. When completely cool, sift powdered sugar over the top. Cut into bars. Cover and store in refrigerator.
