Microwave Pumpkin Mug Cake

Confession, I had some extra pumpkin puree around – and didn’t have the heart to throw perfectly delicious fall flavor in the trash. Must be a cardinal sin, right? Determined to make my next fall inspired dish, I grabbed my cup of coffee and came up with this easy Microwave Pumpkin Mug Cake with Banana.

This mug cake originally started as a pumpkin only mug cake. However, after my first cake was made, I found the sweet craving slightly lacking. Not wanting to add EXTRA sugar to my fall dessert, I found myself wondering what else to add for a little extra sweetness.

Good thing my toddler was about to throw away some delicious banana she had been snacking on. I was able to save the beloved fruit (no literally, I made a diving save in front of the kitchen garbage can) and toss a bit into my mug cake. Perfection! The banana added just the right touch of sweetness to finish off this mug cake with all of the fall warm fuzzy feelings!

Make this delicious gluten-free microwave pumpkin mug cake for a sweet fall indulgence that you don't have to share. Super easy to make with only four ingredients!

Ingredients
  

  • 6 TBSP Yellow Cake Mix
  • 1 TBSP Pumpkin Puree
  • 1 TBSP Banana Puree
  • 2 TBSP Water
  • 1 TSP Pumpkin Pie Spice

Instructions
 

  • Mix cake mix, pumpkin puree, banana puree, water and pumpkin pie spice in a coffee mug. Stir until well combined.
  • Microwave on high for 1 minute and 20 seconds (approximately) or until cake is set.
  • Serve warm.

    I love how easy this recipe is. I’ve made a few microwave cakes cups but not any that is actually made with a cake mix.
