With the warmer weather hitting Florida (already 91 degrees already?!), we have lots of visitors in and out of the house. Definitely not complaining, we love the company. But unexpected visitors means that I need to be prepared to feed the masses, even our friends with food allergies. So I’ve pulled out my slow cooker this spring with this amazing Gluten Free Crockpot Lemon Blueberry Dump Cake.
Dessert. No work. And a Crock Pot. I’m already sold on this recipe.

Ugh, I just purged my pantry thanks to Spring Cleaning. I don’t know about you, but I pack my pantry a bit differently for spring. Instead of cans and cartons for soup fixings, I find myself gravitating towards fresh, bright and cheery foods to stock up my shelves.
And that means dessert, lots of dessert.
I have a weakness for cakes, cookies and brownies. Just ask my husband. When company comes over, you bet I use my guests as an excuse to indulge in a little spring sweetness, like this amazing Gluten Free Crockpot Lemon Blueberry Dump Cake. Sweet, bright and perfect for all of our family and friends (even those with gluten allergies), I love that I can Mix Up a Gluten Free Moment any time folks drop in.
So I headed to Walmart to stock up on a few dessert goodies to have on hand “for company.” Grabbing a few of the new Pillsbury Gluten Free Cake Mixes (The boxes were bright and cheery, right? How could I not?), I knew that I was prepared to have dessert on hand for anyone that stopped by this season.
Ready to make your new favorite slow cooker dessert this spring? Here’s the recipe:
Gluten Free Crockpot Lemon Blueberry Dump Cake
Ingredients
- 1 Box of Gluten Free Yellow Cake Mix like the new Pillsbury Gluten Free Yellow Cake Mix
- 2 21 oz. cans of Blueberry Pie Filling
- 2 TBSP Finely Grated Lemon Zest
- 1 Stick of Butter melted
Instructions
- Spray crock pot with cooking spray. Dump your 2 cans of blueberry pie filling into the slow cooker. Mix in grated lemon zest.Spread for even coverage in your slow cooker.
- Mix butter and cake mix. Dump on top. Spread out evenly.
- Cook high 2 hours, low 4 hours.
One word, everyone. YUM! I love that I can literally “dump” everything into the crock pot when company stops by, for a delicious dessert made in minutes. That means that I can focus on enjoying the moments with our friends and family instead of slaving away in the kitchen.
