Easy Crockpot Lean Stuffed Peppers Recipe

By substituting the brown rice and the ground turkey, I actually was surprised how much more flavor we got into those peppers. Infused in delicious happiness, these lean stuffed peppers were cooked with perfection, all under 10 minutes of prep time.

Easy Crockpot Lean Stuffed Peppers Recipe
Easy Crockpot Lean Stuffed Peppers Recipe
Ingredients
- 4 Green Peppers - gutted
- 1 Cup Brown Rice uncooked
- 1 to 1.5 lbs. Ground Turkey uncooked
- 1 Onion finely chopped
- 1 Jar Pasta Sauce 24 oz.
- 1-2 Tablespoons Italian Seasoning unsalted
- Cooking Spray
- Optional: 1-2 teaspoons of Seasoned Salt
Instructions
- In large bowl combine brown rice, turkey, onion, and seasonings.
- Spray crockpot with cooking spray
- Arrange peppers in crockpot, gutted side up.
- Fill peppers with turkey mixture. It's ok to "stuff" them in there.
- Pour jar of pasta sauce over the tops of the peppers.
- Cook on low for at least 5-6 hours. Avoid the "peeking" to look at them or it will GREATLY affect the cooking of the rice and meat. Trust me, it's worth the wait!

I have to admit I was a little nervous when putting this recipe together. I feared I was going to return home to mushy peppers, filled with raw meat and undercooked rice. I was pleasantly surprised at how good these came out! Definite keeper recipe! I love how quick and easy the prep was, nothing worse than a slow cooker recipe with a ton of prep!

I left these in my slow cooker for 6 hours and they were tasty, but REALLY dry.
Any suggestions? Should I mix in pasta sauce with the turkey before stuffing them?
Also, I thought it was a LOT of meat per pepper. I would suggest stuffing 6 peppers instead of 4. Do you think I could add beans or another filler?

Cristy ~ I used very large peppers, which may have helped. I also evenly covered the sauce over top. I would say to mix a little bit of sauce in with the meat if it was too dry for you or perhaps turn down cooking time to 4 hours. Beans would also make a great filler too if you wanted to cut down on meat. I would suggest precooking the beans though so they’re not hard
