Easy Crockpot Lean Stuffed Peppers Recipe

Easy crockpot meals are growing by storm, and this one is no exception. Very little work but all of the flavor, this Easy Crockpot Lean Stuffed Peppers Recipe is a healthier twist on my original Easy Crockpot Stuffed Peppers recipe.

Just 10 minutes of prep time will have you on your way to a delicious family meal all cooked with your slow cooker. NO pre-cooking! Trust me folks, this lean crockpot recipe has quickly become a family favorite.

Here’s how to make this delicious meal:

By substituting the brown rice and the ground turkey, I actually was surprised how much more flavor we got into those peppers. Infused in delicious happiness, these lean stuffed peppers were cooked with perfection, all under 10 minutes of prep time.

Can we say an amen to an easy dinner?! Gluten free too, this lean crock pot meal is the perfect addition to your family dinners. It certainly is in rotation in mine!

Ingredients
  

  • 4 Green Peppers - gutted
  • 1 Cup Brown Rice uncooked
  • 1 to 1.5 lbs. Ground Turkey uncooked
  • 1 Onion finely chopped
  • 1 Jar Pasta Sauce 24 oz.
  • 1-2 Tablespoons Italian Seasoning unsalted
  • Cooking Spray
  • Optional: 1-2 teaspoons of Seasoned Salt

Instructions
 

  • In large bowl combine brown rice, turkey, onion, and seasonings.
  • Spray crockpot with cooking spray
  • Arrange peppers in crockpot, gutted side up.
  • Fill peppers with turkey mixture. It's ok to "stuff" them in there.
  • Pour jar of pasta sauce over the tops of the peppers.
  • Cook on low for at least 5-6 hours. Avoid the "peeking" to look at them or it will GREATLY affect the cooking of the rice and meat. Trust me, it's worth the wait!

    I am always on board for crockpot recipes and it has been far too long since I last had stuffed peppers. I really like that you put the entire mixture in raw, so there is no pre-cooking involved.
