Easy Cranberry Scones with Simply Orange Glaze

The last time I ate a homemade scone was in England – about 20 years ago. Holding my pinky high, adding about 10 sugar cubes to my tea (hey, I was in 7th grade – I wasn’t much of a tea drinker), and blissfully eating my first ever scone with butter, it was a travel memory that stuck with me for all of these years.

My first attempt at bringing back those delicious England memories, today I’ve made these Easy Cranberry Scones with Simply Orange Glaze. Pairing together the sweetness of oranges with the tartness of cranberries, these bright biscuits are so simple and quick to make! Ready to bring the goodness of a homemade scone into your breakfast routine?

I love a good scone. But these days, I’d much rather eat a scone with a tall glass of orange juice for breakfast.

Unfortunately for my husband, orange juice isn’t a luxury that we get to enjoy together often. Through multiple medical tests and procedures this year, we found out that he has high acid reflux – so bad that his esophagus is eroding away. We’ve had to make quite a few adjustments in our diets to accommodate this new lifestyle change, but orange juice was a tough item to give up.

But this summer, Simply Orange has launched a new orange juice made specifically for folks that are sensitive to acid. New Simply Orange Low Acid offers the delicious and naturally sweet orange juice flavor we love – with reduced acid for a mild and smooth taste. It’s still the 100% pure squeezed orange juice (never sweetened, concentrated or frozen, with no added preservatives, colors or artificial flavors) that our family loves – without the harshness of acid for my husband’s sensitive stomach.

Easy Cranberry Scones Recipe with Simply Orange Glaze

Ingredients
  

  • 2 1/2 cups Flour
  • 1 TBSP Baking Powder
  • 1/2 TSP Salt
  • 8 TBSP Unsalted Butter cold
  • 1/3 cup Granulated Sugar
  • 2 TBSP Grated Orange Zest divided
  • 1/2 cup Dried Cranberries
  • 2/3 Whole Milk cold
  • 1/2 cup powdered sugar sifted
  • 1/2 TBSP Orange Juice such as new Simply Orange Low Acid

Instructions
 

  • Preheat oven to 425 degrees F.
  • Combine flour, baking powder and salt in large bowl.
  • Cut in butter using a pastry blender or fingers until mixture resembles coarse crumbs.
  • Stir in sugar.
  • Add 1 TBSP orange zest, cranberries and milk. Stir using fork until soft dough forms.
  • On lightly floured surface, roll dough into a ball. Press into a well-formed 8 inch circle.
  • Cut into 6-8 wedges.
  • Place wedges on ungreased cookie sheet.
  • Bake 13-16 minutes or until light golden brown. Cool completely.
  • In small bowl, whisk together remaining orange zest, powdered sugar and orange juice until glaze is formed. Drizzle over top of scones.
  • Serve immediately or store in tightly sealed container, refrigerated.
