Dad’s French Toast Casserole Recipe

This recipe brings me back to Christmas breakfast at home, pajamas and warm cinnamon smells from the kitchen. Today I’m sharing my dad’s French Toast Casserole with a twist. This recipe has been well loved and well-eaten in our family for years.

It’s comforting, filling and can feed lots of family and friends. Consider for your next brunch, get together or holiday. Most of the work is done the night before, so you can just pop in the oven and enjoy the next day! Less work and easy? Yes, please!

You can make this a nut-free version by just deleting the pecans from the topping mixture. You want to talk delicious? Yes, it really is that good!

Bring your hungry tummies for this sweet breakfast treat! So good, I don’t even need syrup to eat this delicious goodness! Sticky, sugary, and oh-so-good French toast is ready for your enjoyment!

Ingredients
  

For the French Toast:

  • Butter for the pan
  • 1 loaf of French Bread about 14 oz.
  • 8 Large Eggs
  • 2 cups Vanilla Coffee Creamer
  • 1 cup Milk
  • 1/2 tsp. Ground Cinnamon
  • 1/2 tsp. Ground Nutmeg
  • Pinch of Salt

Nut topping:

  • 3/4 cup Salted Butter melted (1 1/2 sticks)
  • 1 cup Chopped Pecans
  • 1 cup Packed Brown Sugar
  • 2 TBSP Light Corn Syrup
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Ground Cinnamon

Instructions
 

Night Before

  • Butter 9x13 casserole dish generously
  • Cut French Bread into 1 inch thick slices. Arrange in 2 long rows in casserole dish, overlapping slices.
  • In large bowl combine eggs, creamer, milk, cinnamon, nutmeg, salt. Beat with electric beaters until well blended but not too bubbly. Pour over bread slices to evenly cover all pieces. Spoon egg/milk mixture between slices to cover all bread with mixture. Cover dish with foil and refrigerate overnight about 8 hours

Day Of:

  • Preheat oven to 350 degrees F.
  • Combine Nut Topping ingredients in medium bowl. Blend well. Spread over french bread and cover evenly. Bake for 45 minutes or until bread is puffed and lightly golden brown.
  • Serve warm with syrup if desired (I never see the need for it)
