No Bake Korean Cookies with a Christmas Twist
If you haven’t noticed, I’ve been on a “start a new family Christmas tradition” kick lately. There’s something about setting new roots down for my kids. It’s been really important to me this season. And one thing that has been definitely lacking in our house is connecting with our Korean culture.
Trying to find a way to get my kids excited about their Korean heritage, I started looking for Korean cookie recipes. Tis the season, right? And soon we developed the perfect cookies to reflect my Korean American kids. Try these easy No Bake Korean Cookies with a Christmas Twist for a unique spin on the Christmas cookie exchange.
Cooking with Kids 101
When I have little helpers in the kitchen, you know what that means. FUN! And mess. Lots of mess. The first thing we discovered about these No Bake Korean Cookies is that there’s a lot of sticky ingredients. Honey, corn syrup, sugar – I would have every possible corner of my kitchen covered in sticky little fingerprints.
But here’s the thing about Type-A me, I hate a messy kitchen. (Laundry is another story, I could let that go for days.) So while my daughter is stirring a pot of sticky sweet Korean cookie ingredients, I’m usually following behind, cleaning as we cook. Yes, I’m THAT mom. No Bake Korean Cookies Recipe, with a Christmas Twist
And speaking of kitchen adventures, we definitely took a few twists and turns to make these No Bake Korean Cookies. The original recipe called for Korean rice syrup, which silly me thought I could walk into any store and grab. But turns out Korean rice syrup is hard to find. So after an interesting trip to the Asian market (my daughter decided fish smells were not to her liking) and an Amazon prime fail, I decided to get a little MacGyver on these No Bake Korean Cookies.
I love this cookie recipe because not only does it have a delicate sesame seed taste (who doesn’t love roasted sesame seeds?), but it’s also perfect for families with allergies. No gluten or dairy and only a few ingredients is all you will need for this recipe. Here’s the recipe.
Ingredients:
- 2 cups sesame seeds, roasted
- 1/2 cup sugar
- 2 TBSP water
- 1/2 cup corn syrup
- 3/4 cup honey
- 1/4 TSP sea salt
Directions:
- Grind sesame seeds in blender or food processor for 1-2 minutes, or until the seeds become a fine paste, just beginning to clump together.
- In small saucepan combine sugar and water. Cook over medium heat, stirring constantly until melted. Do NOT burn.
- Add corn syrup and honey. Bring to a boil. Stir constantly until just bubbling and syrup is of thin/runny liquid consistency (like store-bought maple syrup). Remove from heat and cool.
- Add sesame seeds to a bowl. Combine with sea salt.
- In a smaller bowl, add about 1/2 cup full of seeds and about 1 TBSP of honey syrup. Stir (may need to use fingers) to combine until you have a thick paste, play dough consistency (not too wet or sticky – this takes practice).
- Grab your Christmas cookie cutters. Fill your cookie cutters to make desired shape, about 1/4-1/2 inch thick. Press together until firm.
- Serve immediately. Store leftovers in airtight container (unrefrigerated).
I think the most satisfying part of making these No Bake Korean Cookies with my daughter was watching her take her first bite. Not only was she biting into memories that we made together this Christmas, but she was taking a bite into a Korean culture that she can be proud of, no matter what the season. Please be aware that sesame allergy is on the rise. It’s the most difficult of the allergies we have to manage! Hopefully the FDA will make it one of their major allergens soon.

I love Korean food, but have yet to try a Korean cookie. This recipe reminds me of the sesame / honey sticks that I used to eat and love as a child.

The cookies look so yummy!! I have not seen the Purell spray bottle cleaner. It makes sense that they would make a cleaner considering how well the hand cleaner works. I’ll have to look for it the next time I’m at the store.
