So remember that can of pumpkin in my fridge? Yep, it was still around. Even after 2 recipes, the can remained. Every time I opened the fridge, the can stared me down as if to say “why haven’t you eaten me yet?” I can’t waste perfectly delicious pumpkin. I just can’t.
But as fall takes it’s sweet time arriving in Florida (um, can I say no to 90 degree temperatures now?), I’m dreaming of cool temperatures in a more constructive way. Creamy Pumpkin Popsicles. All of the creaminess of pumpkin dessert, this healthier fall treat is a delicious way to welcome in the season. Perfect dairy-free treat for kids (with a baby safe option) – enjoy this creamy popsicle recipe all fall long.
Ready to make some? You only need 3 ingredients!
You won’t miss the cream in this popsicle recipe. Zero bloat, and perfect for kids with allergies!
Lingering can of pumpkin, meet my ripening bananas. The key to creamy pumpkin popsicles is the addition of bananas. Good thing that I had a bunch just chilling in my kitchen. Don’t even get me started on how many bananas end up being rotten and thrown away every week. It’s a sign of a busy mom.
So hitting two birds with one stone? Done and done.
