No Guilt Slow Cooker Pumpkin Stuffed Apples Recipe
It’s pumpkin pie stuffed into a baked apple and made with a slow cooker. I’m in love already. With so many delicious apple choices on the 2017 Produce for Kids list, it was an easy choice to make a delicious fall apple inspired recipe. There’s no side of guilt with this No Guilt Slow Cooker Pumpkin Stuffed Apples Recipe – I’ve taken out all of the sugar and opted for more natural sweeteners in this clean eating inspired dessert, so your whole family can enjoy together!
No Guilt Slow Cooker Pumpkin Stuffed Apples
Ingredients
- 4-5 large apples such as CMI Orchard or Michigan Apples
- 1/2 cup of pumpkin puree
- 1/4 cup rolled oats
- 1/4 cup chopped pecans
- 1/4 cup raisins
- 2-3 TBSP Pure Maple Syrup
- 1/2 TSP Pumpkin Pie Spice
- Cooking Spray
Instructions
- Spray slow cooker with cooking spray.
- In small bowl combine pumpkin puree, oats, pecans, raisins, maple syrup, and pumpkin pie spice.
- Slice 1/4 inch off the tops of the apples so the skin is removed from the tops. Hollow out the center core of each apple (leaving the bottoms). Place in slow cooker, hollowed out sides up.
- Stuff apples with pumpkin mixture, pressing in if desired. It's ok to over-stuff.
- Cook on low for 2-3 hours or until apple is cooked through and easily pierced with a knife.
- Serve warm.
Easily one of my husband’s favorite desserts to date (guess who’s winning in the amazing wife department?), we definitely are enjoying the extra pumpkin obsession stuffed into each apple. It’s just like having your own personal pumpkin pie!
