Mini BLT Bites with Avocado Vinaigrette Dressing

Betcha can’t have just one.

The classic BLT, a flavor combo that never goes out of style. The New Year is here and so is my commitment to a healthier lifestyle: like eating better. That’s really hard for a girl that could live on bread and pasta. But in effort to stay on track this 2017 (I’m calling it kick my depression‘s butt year), I’m going low on carbs, high on taste.

With game day here and appetizers out the wazoo, now’s a great time to introduce you to my new favorite low-carb bite. Time to make these Mini BLT Bites with Homemade Avocado Vinaigrette Dressing.

So much has changed since December 2016. This mental health journey has been quite an eye-opener for me, with the realization that I need to slow down the world (yes, even the blog) and focus on me.

That means I’m back on the healthy bandwagon – exercising, eating better, making sure to get out of the house more, finding more “me” time. I can handle most of these changes, but let me say this. That eating better goal comes at a price. Fresh produce (especially organic) costs seem to continue to rise, making it difficult to dig into our family budget to stock up on fruits and veggies.

Can I let you in on a little secret? I’ve been stocking up on fresh organic produce at a bargain. Where, you ask? My local BJ’s Wholesale Club. My fresh produce savings started with this $10 off BJ’s membership coupon – making my membership only $40 for the entire year. And the savings only continued from there.

The organic options are great, especially when I can grab lettuce for as low as $2.99 for 3 heads of romaine lettuce, and grab a HUGE amount of sweet organic cherry tomatoes for the same price as non-organic!

Plus, I love how BJ’s Wholesale Club allows me to save when buying in bulk, especially with football season in full swing. And with coupons right at the door, free samples and the cutest little shopping helper in tow, our weekly BJ’s Wholesale Club shopping trips are becoming fun little outings for mommy and daughter.

As we get ready for the biggest game of the year, I thought a healthy appetizer twist is just what this gal needed. Combining a familiar favorite with a low-carb bite and let’s not forget a tangy homemade avocado vinaigrette dressing – WINNING, y’all.

Ready to make this crowd-pleasing appetizer, featuring the bargain organic produce that I grabbed from BJ’s Wholesale Club? Here’s the recipe:

Ingredients
  

  • Cherry Tomatoes
  • Romaine Lettuce
  • 1 pkg. of Bacon fully cooked if desired
  • 1 Ripe Avocado de-seeded and peel removed
  • 3 TBSP White Distilled Vinegar
  • 1-2 TBSP fresh squeezed Lemon Juice (depending on your tartness
  • 1 TSP Garlic minced
  • Salt and Pepper to taste
  • Olive Oil

Instructions
 

  • Add avocado, vinegar, garlic, salt and pepper to food processor.
  • Blend until smooth.
  • Drizzle in olive oil while blending until just combined.
  • Place dressing in tightly sealed container. Chill until ready for use.
  • Cook bacon until cooked through and crispy. Cut into bite sized squares.
  • Cut cherry tomatoes in half.
  • Cut lettuce into bite sized squares.
  • Pile bacon and lettuce between two cherry tomato halves. Pierce with toothpick.
  • Continue steps above to complete each mini BLT bite.
  • Drizzle dressing over each mini BLT bite. Serve.

Easy BLT appetizer

The perfect little bite, I love how the lettuce and crispy bacon are nestled perfect between a cherry tomato. Then just drizzle with the delicious homemade avocado dressing, it’s a little taste of heaven. I had no problem devouring eating professionally taste-testing this recipe for you.
