Microwave Habanero Egg Sandwich Recipe #SauceOn

It’s 10 days away. Back-to-School will be here in 10 days, and this mom is far from ready. Everyone up early (including the cranky baby), dressed, packed and out the door to sit in a ridiculous car line to drop off my precious cargo to Kindergarten….and don’t even get me started with breakfast. I’m lucky enough to get my son to eat 5 bites before we need to rush outside. If you’re in the same boat as me (virtual high five), then you know how important those morning minutes can be. So I made this easy Microwave Habanero Egg Sandwich Recipe to spice up your mornings and fuel your Back-to-School schedules!

I love Southwestern inspired food, and would definitely eat it everyday if I could. I’m also a huge fan of the egg sandwich, but I don’t have the time to pull out the fry pan every morning! So with this easy Microwave Habanero Egg Sandwich Recipe, I can still enjoy fluffy eggs, even if I have to quickly get everyone off to school!

Ingredients:

  • 2 eggs
  • 2-3 mini sweet peppers, diced
  • 1-2 tsp. of milk
  • salt & pepper, to taste
  • shred cheddar cheese
  • El Yucateco Hot Sauce (Red Habanero, Green Habanero or XXXtra Hot Kutbil-ik Sauce)
  • 2 small corn tortillas, grilled if desired (also think bagel, toast, English muffin)

Directions:

  1. Beat eggs in small round microwaveable dish. I used a small Corningware.
  2. Add peppers, milk, salt & pepper and cheese. Mix well.
  3. Microwave on high for 30 seconds, stir.
  4. Microwave on high for 60 seconds or until done. Eggs should be slightly moist/little runnier in the middle. Eggs will cook a little more sitting in the dish.
  5. Top with El Yucateco Hot Sauce
  6. Serve between 2 corn tortillas.
