Loaded Brunch Nachos Recipe
I’m telling you, the chip makes the nachos. And with Jackson’s Honest Lime & Sea Salt Tortilla Chips, the tangy lime is already infused in the chips for the ultimate Loaded Brunch Nachos – leave your guilt at the door. Packed with protein, loaded with fresh toppings, and ready in minutes, this healthy snack idea will have your crowds gathering at the table in no time. Ingredients:
- 1 Bag of Jackson’s Honest Lime & Sea Salt Tortilla Chips
- 1 Can of Black Beans
- 1/2 Pint of Grape Tomatoes, chopped
- 1 Ear of Fresh Corn on the Cob, kernels removed and saved
- 2 Jalapenos, sliced and deseeded
- 1/4 Cup of Red Onion, diced
- 3 Eggs
- 1 Ripe Avocado, sliced
- 2 TBSP Fresh Cilantro, chopped
Directions:
- Pre-heat broiler to 425 degrees F.
- Layer a baking sheet with tortilla chips. Top with black beans, tomatoes, corn kernels, jalapenos, and red onion.
- Broil for 10-15 minutes, or until chips are slightly browned and the tomatoes are blistered.
- While baking, heat skillet to medium high heat. Cook eggs sunny side up, reducing heat to low for 4-5 minutes, until cooked through.
- Top Loaded Brunch Nachos with cooked eggs, avocado, and sprinkle with fresh cilantro. Serve warm.
