Wanting to keep things simple, delicious and a bit healthier (it is the New Year, of course) for 2016, I’ve been cooking up a delicious twist on a classic family soup.
This Gluten Free Crockpot Italian Wedding Soup is perfect for busy family weeknights, with less work, lots of flavor and warm goodness for the winter months ahead. And you won’t want to miss my secret to soup perfection every single time!
Italian Wedding Soup has always been one of my personal favorite soups. A hearty meal within itself, it has the deliciousness of meatballs, veggies and pasta…and no one in the family complaining. But you know why I hate making this soup at home?

Homemade meatballs. Almost every recipe I’ve found calls for homemade meatballs. The mixing, the rolling, the baking and then the soup cooking? I’m sorry. This mom doesn’t have the time for all of that nonsense when we have baseball season, boy scouts and homework to contend with. So what’s my secret to perfect meatballs for Italian Wedding Soup? Gluten Free Crockpot Italian Wedding Soup Recipe
Ingredients
- 1/2 Bag of Farm Rich Gluten Free Turkey Meatballs 10 oz.
- 6 Cups of Reduced Sodium Chicken Broth
- 1 1/2 Cups of Celery diced
- 1 1/2 Cups of Carrots peeled and diced
- 1 1/2 Cups of Onions finely diced
- 2 Bay Leaves
- 2 TSP of Garlic Powder
- 2 TSP Oregano
- 1 TSP Basil
- 2 Cups of Fresh Spinach chopped
- 1/2 Cup of Gluten Free Pasta
- Salt & Pepper to taste
- Parmesan Cheese for garnish as desired
Instructions
- Combine all ingredients in slow cooker except for spinach, pasta and parmesan cheese.
- Cook on low 6-8 hours.
- During last 30 minutes of cooking, add spinach and pasta.
- Remove Bay Leaves.
- Garnish with Parmesan Cheese as desired
- Serve warm.
