My family is a huge fan of yogurt. While normally a great choice for breakfast or an afternoon snack, my kids “inhale” their cups like they’re eating dessert. So when Yoplait approached me to make a delicious recipe that was NOT breakfast related, an after dinner snack instantly popped into my head. My kids eat yogurt like dessert anyway, why not whip up a delicious wholesome recipe the whole family can enjoy? And with me being on a Greek Yogurt kick, Yoplait Greek Yogurt cups were the perfect way to blend together the taste that I love and the sweetness my kids love.
I’ve always been a sucker for a delicious dessert. But with summer waistlines not being so kind during the bathing suit season, I wanted a refreshing taste that was better for me and my family to enjoy on any night. This quick no bake dessert will have your whole gang begging for these fruit tarts nightly. And with a little help from the youngest chefs in the kitchen, your creative juices can flow every night of the week!
Ingredients:
- 1/2 cup of raw pecans
- 1/2 cup of raw almonds
- 20 dates, pitted
- (2) 6 oz. cups of Yoplait Greek Yogurt – I used the Coconut flavor
- Variety of fresh fruit, peeled and cut into
- 6 Mini tart pans
Directions:
1. Using a strong food processor, pulse together the raw pecans and raw almonds. Add dates and pulse/chop until you get a coarse paste.
2. Press your crust into the bottoms of mini fruit tart pans.
3. Spoon in Yoplait Greek Yogurt into your crusts. Go ahead, be generous 🙂
4. Bring on the creativity! Add fresh fruit into beautiful arrangements on top of your tarts. The more color, the better!
Be sure to wave hi to your oven as your pass it by. You certainly do not need to bake this deliciousness! My kids’ eating habits did not slow down with this delicious dessert. They loved getting their own fancy tart to eat. My daughter was quickly begging for a second cup and my husband basically told me it was the best dessert I’ve made to date. (A huge pat on the back for wife of the year!) And how beautiful did the designs come out? I’m definitely busting these tarts at our next party. Easy to make and no bake? Yes, please! Plus being gluten free, you can satisfy every sweet palate. Make these tarts ahead of time for a delicious and beautiful addition to your dessert display.
