Easy Stuffed Tomato Recipe

YUM! I was super excited to grab tomatoes at Winn Dixie this past week. Did you know that the tomatoes are big, and juicy right now? So this Stuffed Tomato Recipe was a perfect way to highlight everything I love about the tomato. Gluten-free and low in fat, this recipe is delicious, fresh and a family pleaser!

Ingredients:

  • 4 Big Fat Juicy Tomatoes
  • 1 lb. Ground Chicken, cooked and drained
  • 1 TSP. Olive Oil
  • 1/2 cup Onions, diced
  • 1/4 cup Sweet Peppers, diced
  • 1 clove of Garlic, minced
  • 1 TSP. Seasoned Salt
  • 1/4 TSP. Black Pepper
  • 1/2 cup Mozzarella Shredded Cheese
  • 1/4 cup Parmesan Cheese

Directions:

  1. Preheat oven to 400 degrees F.
  2. Remove tops and insides of tomatoes. Save for another recipe.
  3. Saute onion, peppers and garlic in large pan over medium low heat, until onions are soft and translucent. Remove from heat.
  4. Add chicken, seasoned salt and pepper. Stir until heated through.
  5. Stuff chicken mixture into tomatoes. Top with mozzarella. Sprinkle with Parmesan.
  6. Place on baking sheet and bake in oven for 15 minutes, or until cheese is melted and tomatoes are soft.

Serve immediately. Makes 4 servings.

This is a great family meal that’s filling with no heavy gluten! Even my baby girl loved eating this one!

    I had never thought of stuffing tomatoes. My tomatoes are just starting to produce fruit. I’ll definitely use this recipe this summer!

    I’ve never stuffed a tomato before, just peppers! I like to eat cherry tomatoes with fresh mozzarella & basil, drizzled with some olive oil & balsamic vinegar.

    I actually just thought a few weeks ago about making stuffed tomatoes. I’m not a huge fan of peppers, but I love tomatoes! Now, I for sure have to give it a try.

    I have done stuffed peppers, but never tomatoes. I am pinning this to save for when my garden tomatoes start to get out of control before we have a chance to can them!

    I have always wanted to shop at a Winn-Dixie. I know that sounds silly, but we don’t have any here in California. The name Winn-Dixie has become an icon of the South. That’s an experience I would love to have. It would be fun to say, “I’m goin’ to the Winn-Dixie. Anyone need anything?”

    we stuff peppers all the time. never thought about tomatoes! i bet they’d be SO good with fresh garden tomatoes!

    I have never had stuffed tomatoes! I like the switch up from the stuffed peppers- I am not a huge fan of eating that much pepper, but I will eat a ton of tomatoes!

    First off you still have Winn-Dixie’s near you? I’m so freaking jealous, we love Winn-Dixie but they closed all the ones down around us. Next, that stuffed tomato looks and sounds soooo delicious.
