Easy DIY Fruit Leather

Feeding your kids the right foods can be challenging at best. But now with the kids out of school, there are extra hurdles to overcome. And this season, the Produce for Kids Healthy Eating Campaign is another reason to families are jumping at the chance to give back. Produce for Kids is partnering with Feeding America through July 1, 2015. And your family can help.

Now through July 1st, when your family purchases fresh produce at Publix, part of the proceeds goes to directly feed your local families. Look for special displays and signs featuring characters from Cloudy with a Chance of Meatballs 2 movie, participating produce suppliers and tips for your family to encourage more healthy eating.

Feeling inspired to support Produce for Kids and Feeding America this season, I was able to whip up this Easy DIY Berry Mango Fruit Leather using some of the participating produce.

Want to make your own fruit leather at home? It's Easy! Grab participating Produce for Kids fruit products and make this delicious snack for your children

Ingredients
  

  • 1 pint of Driscoll's Raspberries washed
  • 1 Ripe Coast Tropical Mango peeled and sliced
  • 1 TBSP of Honey or 1 1/2 TBSP Agave Nectar
  • Parchment Paper

Instructions
 

  • Preheat oven to 200 degrees F.
  • In Blender (or food processor), blend together ingredients until smooth.
  • Lay parchment paper across an entire cookie sheet. (I used a 9x13. You may need 2 cookie sheets if area is smaller)
  • Using spatula, spread mixture evenly on the bottom of the cookie sheet. Should be very thin, but not with holes.
  • Bake at 200 degrees F for 2 to 4 hours, or until mixture is sticky, but won't come up on your fingers when touched (hence the leather look). Avoid letting the fruit leather completely drying out and browning. You may need to turn up the oven to 225 or 250 at the 2 hour mark if your mixture is thicker.
  • Allow fruit leather to completely cool.
  • Cut intro strips (including the parchment paper if desired)
  • EAT 🙂
  • Store in an air-tight container for up to 1 month at room temperature

    Fruit leather is so good but I worry about what I am eating. It is so great that you can make it yourself and know exactly what you are putting in your body.

    We don’t have Publix by us in Colorado however we loved shopping at a Publix near a vacation home in Florida a few years ago. They had a great selection of fresh produce. Love your recipe!

    I love this recipe! I had no clue that this was so easy to make. I love how healthy it is too, compared to the boxed kind. I’m also loving this promotion at Publix. I definitely will be participating. Thank you for the recipe and sharing this importation information!
