Crockpot Corn Casserole Recipe + Thanksgiving Prep Tips
Sooooo I have a Thanksgiving confession. I stink at making a Thanksgiving Turkey. So if you ever come to my house for the Thanksgiving holiday, I hope that you’re bringing the bird 🙂 However, I do make a MEAN Thanksgiving side dish. My secret? The good ole crock pot and a little help from my freezer. So today I’m sharing my Make Ahead Crockpot Corn Casserole Recipe. These slow simmering sweet corn flavors can be made ahead of the big Thanksgiving Day for a delicious vegetarian friendly comfort food side with crunchy topping. Mouth. Salivating. So grab your recipe for this easy Thanksgiving side dish and lots of Thanksgiving Prep Tips!
While Turkey, Stuffing and Mashed Potatoes seem to get the spotlight on Thanksgiving, the veggies really make the meal. Seriously. And a great corn casserole always comes to mind. Slow simmered flavors and the sweetness of corn with a buttery crunch topping….oh, delicious perfection. This super EASY corn casserole can be slow simmered, frozen and then finished on Turkey Day for a side dish that will have people wondering how you had the time to slave over this one. Shhhh….don’t share our secret 🙂

Make Ahead Crockpot Corn Casserole Recipe
Ingredients
- 30 oz. frozen corn kernels
- 14.75 oz can of cream corn
- 1/2 cup of sweet onion finely diced
- 8 oz. cream cheese softened
- 1/2 cup milk
- 40 buttery crackers such as Ritz, crushed
- salt & pepper to taste
- Cooking Spray
- 20 buttery crackers such as Ritz, crushed
- 1/4 cup butter melted
Instructions
- Spray crock pot with cooking spray (or use a slow cooker liner)
- Combine all ingredients in slow cooker, except for the 20 Ritz crackers and butter.
- Heat on high 4-6 hours, stirring occasionally to prevent sticking
- Cool completely. Store in freezer up to 2 weeks
- Thaw in fridge 24 hours before use.
- Place casserole back in slow cooker. Top with 20 crushed crackers and drizzle with melted butter.
- Heat on high 2-4 hours or until heated through.
