I am a creature of habit. 2 boiled eggs for breakfast everyday. My husband shakes his head at me as I stand over my pot every morning, waiting for the water to boil. I know there are other ways to cook eggs, but this is comfortable. Familiar. But when I was asked to join the 30 Day Protein Challenge, I had to step outside of my “comfort breakfast” box.

Ingredients
  

  • 1 bell pepper
  • 2 eggs
  • 4 oz. of leftover steak or deli roast beef cut into thin strips
  • 1/4 cup shred mozzarella cheese
  • 2 TBSP of sweet onion diced
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350 degrees.
  • Slice your bell pepper in half lengthwise (from top to bottom). Remove seeds.
  • In small bowl, combine eggs, steak, cheese, onion, salt and pepper.
  • Pour egg mixture into peppers.
  • Bake for 30-35 minutes or until egg is set.
  • Serve warm.

    I love stuffed green peppers and I’ve made them for dinner, but I never thought of them as breakfast food! Even though I do love Veggie omelettes! These look and sound delicious! What a clever idea to use leftover delimeats!! I am one that does NOT like to waste food! Thanks for sharing!

    I literally just went to the store to get the ingredients to make this. I’ve been craving protein lately and when I saw this I just thought, “YES”. I cannot wait to make this for breakfast.

    Interesting many cultures eat savory foods, not sweet carbs for breakfast. The stuffed peppers look yummy.
