2015. A new year. A clean slate. And the height of football season. Weight loss goals are definitely at the top of the list for New Years Resolutions. But with the big game day around the corner, how do you stay on track to the best healthy you? This Grilled Zucchini Nachos Recipe, inspired by Weight Watchers-endorsed products will satisfy your game day munchies craving, with a delicious healthy twist!

Nachos are definitely one of my favorite game day foods. Loaded with toppings, these grab and go appetizers are colorful, flavorful and perfect for watching football on the big screen. But those chips and that cheese can really set you off your healthy weight loss goals for the new year. Wanting to start my 2015 off on the right foot, I was inspired to make a healthier nachos recipe using Weight Watchers-endorsed products to stay on track.

Grilled zucchini chips

Coat your zucchini slices in olive oil. Then grill them for about 5 minutes per side, until done. I love getting those beautiful grill marks on my zucchini chips!

Then have fun! Layer your nachos with lots of fresh toppings like tomato, red onion, avocado and jalapeno for a zesty appetizer filled with flavor!

Ingredients
  

  • 2-3 Fresh Zucchini cut into 1/4-1/2 thick slices
  • Can of Black Beans rinsed and drained
  • 1 Fresh Tomato
  • 1/2 Fresh Red Onion diced
  • 1 Fresh Avocado sliced
  • Olive Oil
  • 1 Can of Progresso Light Chicken & Cheese Enchilada Soup
  • Optional: Fresh Sliced Jalapenos

Instructions
 

  • Preheat grill to medium.
  • Coat zucchini in olive oil.
  • Grill zucchini slices, about 5 minutes per side until done. Remove from heat.
  • Warm soup in microwave 2-3 minutes, until warm.
  • Layer zucchini, black beans, tomato, onion, avocado and jalapenos on a serving plate.
  • Drizzle with soup.
  • Serve immediately
