Fall Steak Kabobs with Apple Cider Marinade

We Floridians have to be a tad bit more creative when it comes to incorporating fall into our lives – which is why I’m taking fall to the grill. Why I Joined the Protein Challenge
Every morning, I wake up feeling great. I have 2 boiled eggs for breakfast, along with my cup of coffee. By the time I finish eating, I’m ready to conquer the world. I wish I could tell you that the feeling lasts all day. But that’s where you lose me.
In the midst of errands, toddler wrangling, work and a constant stream of interruptions – I may have lunch around 3-4 pm – that’s if I get to eat at all. The afternoon crash hits me, hard. By the time dinner rolls around, I’m starving – shoveling in the equivalent of 2 meals in about 5 minutes. Barely enough energy to stay awake, I checkout – barely tucking my kids in before my head hits the pillow. Not my best parenting. And then the cycle starts over the next day.
Face palm.
I knew that I needed a big change. But here’s the thing, I’m NOT a diet girl. Fall Steak Kabobs with Apple Cider Marinade Recipe
Since dinner is where I struggle the most, I aimed high with this Fall Steak Kabobs with Apple Cider Marinade. Needless, to say, WOW. Talk about an easy way to incorporate more protein in my day – these steak kabobs are amazingly simple to make and so delicious! The hint of apple cider sweetness on the steak makes this such a winner for the fall season. Plus the easy to portion skewers help me to stay on track.
Here’s the recipe:
Fall Steak Kabobs with Apple Cider Marinade
Ingredients
- 2 lb. Sirloin Steak Tips cut into large 1 inch chunks
- 1 Large Sweet Potato peeled and cut into 2 inch cubes
- 1 Large Sweet Onion chopped
- 1/2 Cup Apple Cider
- 2 TSP Soy Sauce
- 1 TBSP Apple Cider Vinegar
- 1 TBSP Minced Garlic
- 1/4 Cup Chopped Sweet Onion
- 1/4 TSP Salt
- 1/4 TSP Black Pepper
- 6 Bamboo Skewers soaked in water.
Instructions
- Place your sweet potato into a microwaveable bowl. Cover. Microwave for about 3-4 minutes on high - until potatoes are cooked but firm.
- In medium bowl, combine cider, soy sauce, cider vinegar, garlic, onion, salt and pepper. Add steak tips. Marinade for at least 30 minutes (ideally 3-4 hours in the fridge).
- Skewer your steak, sweet potatoes and onion on your bamboo skewers.
- Grill on medium high for about 10-12 minutes, turning once during cooking.
- Serve warm.
