Easy Vegetarian Tortilla Soup Recipe
There are many reasons why fall is my favorite season of the year. But one of the best reasons……soup. This girl can eat soup when it’s 100 degrees outside, but there’s something about cool fall weather and a steaming bowl of homemade soup that has me feeling warm and fuzzy inside. Insert this amazing delicious and Easy Vegetarian Tortilla Soup Recipe. Only 7 ingredients (and yes, that includes spices!), gluten free and dairy free, this soup has been taste tested and approved by some of my world’s most critical judges (including my particular husband). So come and feel cozy with me this fall with a hearty and delicious soup (and even a crockpot recipe version). No meat required!
Have you ever surprised yourself in the kitchen? It happened to me with this recipe. Only 7 ingredients in, I was in complete shock that this soup did not require ANY extra seasoning. No seriously, my mouth was agape. It was perfection, just as is and one of the most delicious soups I’ve ever had. And just because I thought I was crazy, I had not one but 3 extra people taste test the recipe. And everyone had the same response. Incredibly delicious! Hearty, spicy and not missing the meat at all (anyone else hating the rising meat prices?), this Vegetarian Tortilla Soup is the perfect way to welcome fall. And now, I share my creation with you. Ready to make the easiest vegetarian tortilla soup ever? So simple!
The Easiest Vegetarian Tortilla Soup Recipe
Ingredients
- 2 28 oz. cans of Crushed Tomatoes
- 7 oz. can Jalapenos drained and chopped (I used medium for a spicy kick)
- 8 C. of Vegetarian Broth
- 2 C. Frozen Corn
- 20 oz. of Frozen Onions/Peppers Veggie Mix
- 2 15 oz. cans of Black Beans (not drained)
- 16 oz. of Tofu - such as Nasoya Chipotle TofuBaked cut into bite sized cubes
- OPTIONAL: Sliced avocado sprinkle cheese, tortilla chips
Instructions
- Combine all ingredients (except Tofu and black beans) in a large stockpot on the stove. Heat to medium and stir occasionally until soup comes to a boil.
- Reduce heat and cover about 1 hour.
- Add Black Beans and Tofu and cook over low/medium low heat until heated through.
- Serve warm. Top with tortilla chips, avocado and/or cheese if desired.
- Freezes well
Want to make this one in the crock pot? Just simmer on low for 4-6 hours, adding the tofu and beans an hour before finished. YUM!
