Ingredients

  • 4-5 large apples such as CMI Orchard or Michigan Apples
  • 1/2 cup of pumpkin puree
  • 1/4 cup rolled oats
  • 1/4 cup chopped pecans
  • 1/4 cup raisins
  • 2-3 TBSP Pure Maple Syrup
  • 1/2 TSP Pumpkin Pie Spice
  • Cooking Spray

Instructions

  • Spray slow cooker with cooking spray.
  • In small bowl combine pumpkin puree, oats, pecans, raisins, maple syrup, and pumpkin pie spice.
  • Slice 1/4 inch off the tops of the apples so the skin is removed from the tops. Hollow out the center core of each apple (leaving the bottoms). Place in slow cooker, hollowed out sides up.
  • Stuff apples with pumpkin mixture, pressing in if desired. It's ok to over-stuff.
  • Cook on low for 2-3 hours or until apple is cooked through and easily pierced with a knife.
  • Serve warm.
