Preheat oven to 375 degrees F.
In small bowl, combine flour, baking soda and salt.
In large bowl, beat brown sugar, sugar, butter, vanilla, cinnamon, cardamom, cloves, and ginger until creamy.
Add eggs, one at a time, beating well after each egg addition.
Gradually beat in flour mixture.
Stir in chocolate chips.
Drop by rounded teaspoonfuls on ungreased baking sheets.
Bake about 9-11 minutes or until golden brown.
Cool completely on wire racks.
When completely cool, place a scoop of ice cream in between 2 cookies. Press together to make an ice cream sandwich.
Serve immediately
