Ingredients
  

  • 1 Bag of Jackson's Honest Lime & Sea Salt Tortilla Chips
  • 1 Can of Black Beans
  • 1/2 Pint of Grape Tomatoes chopped
  • 1 Ear of Fresh Corn on the Cob kernels removed and saved
  • 2 Jalapenos sliced and deseeded
  • 1/4 Cup of Red Onion diced
  • 3 Eggs
  • 1 Ripe Avocado sliced
  • 2 TBSP Fresh Cilantro chopped

Instructions
 

  • Pre-heat broiler to 425 degrees F.
  • Layer a baking sheet with tortilla chips. Top with black beans, tomatoes, corn kernels, jalapenos, and red onion.
  • Broil for 10-15 minutes, or until chips are slightly browned and the tomatoes are blistered.
  • While baking, heat skillet to medium high heat. Cook eggs sunny side up, reducing heat to low for 4-5 minutes, until cooked through.
  • Top Loaded Brunch Nachos with cooked eggs, avocado, and sprinkle with fresh cilantro. Serve warm.
