Ingredients
  

Key Lime Vinaigrette

  • Juice from 4-5 Florida Key Limes about 1/4 cup
  • 1 Fresh Clove of Garlic
  • 1/2 Cup of Olive Oil
  • 2 TBSP Honey
  • Pinch of Onion Powder
  • Salt and Pepper to taste

Grilled Peach Caprese Salad:

  • Fresh Peaches go for Florida, y'all!
  • Olive Oil
  • Fresh Basil Leaves
  • Fresh Mozzarella Cheese soft, packaged in liquid
  • OPTIONAL: Rotisserie Chicken and/or Prosciutto Balsamic Vinegar

Instructions
 

  • Let's start with the key lime vinaigrette, so it will have extra time to mix those delightful flavors. Combine all vinaigrette ingredients in a sealed container. Shake and refrigerate until ready for use.
  • Time to fire up the grill! Preheat to medium heat.Cut your peaches into thick 1/2-3/4 inch thick slices.
  • Brush with olive oil. Grill with cut side down, about 4-5 minutes until grill marks appear. Flip and grill the other side until tender, about 4-5 minutes. Remove from heat.
  • Wash and dry basil leaves. Slice mozzarella cheese into 1/2-3/4 inch slices.
  • Alternate layering grilled peach slices, basil leaf, and mozzarella slices onto dish. Drizzle with Balsamic vinegar and key lime vinaigrette.Serve immediately. Refrigerate any leftovers.
