Grilled Peach Caprese Salad with Key Lime Vinaigrette

Key Lime Vinaigrette
- Juice from 4-5 Florida Key Limes about 1/4 cup
- 1 Fresh Clove of Garlic
- 1/2 Cup of Olive Oil
- 2 TBSP Honey
- Pinch of Onion Powder
- Salt and Pepper to taste
Grilled Peach Caprese Salad:
- Fresh Peaches go for Florida, y'all!
- Olive Oil
- Fresh Basil Leaves
- Fresh Mozzarella Cheese soft, packaged in liquid
- OPTIONAL: Rotisserie Chicken and/or Prosciutto Balsamic Vinegar
Let's start with the key lime vinaigrette, so it will have extra time to mix those delightful flavors. Combine all vinaigrette ingredients in a sealed container. Shake and refrigerate until ready for use.
Time to fire up the grill! Preheat to medium heat.Cut your peaches into thick 1/2-3/4 inch thick slices.
Brush with olive oil. Grill with cut side down, about 4-5 minutes until grill marks appear. Flip and grill the other side until tender, about 4-5 minutes. Remove from heat.
Wash and dry basil leaves. Slice mozzarella cheese into 1/2-3/4 inch slices.
Alternate layering grilled peach slices, basil leaf, and mozzarella slices onto dish. Drizzle with Balsamic vinegar and key lime vinaigrette.Serve immediately. Refrigerate any leftovers.
