- 1 bell pepper
- 2 eggs
- 4 oz. of leftover steak or deli roast beef cut into thin strips
- 1/4 cup shred mozzarella cheese
- 2 TBSP of sweet onion diced
- salt and pepper to taste
Preheat oven to 350 degrees.
Slice your bell pepper in half lengthwise (from top to bottom). Remove seeds.
In small bowl, combine eggs, steak, cheese, onion, salt and pepper.
Pour egg mixture into peppers.
Bake for 30-35 minutes or until egg is set.
Serve warm.
