  • Cherry Tomatoes
  • Romaine Lettuce
  • 1 pkg. of Bacon (fully cooked if desired)
  • 1 Ripe Avocado, de-seeded and peel removed
  • 3 TBSP White Distilled Vinegar
  • 1-2 TBSP fresh squeezed Lemon Juice (depending on your tartness
  • 1 TSP Garlic, minced
  • Salt and Pepper to taste
  • Olive Oil
  1. Add avocado, vinegar, garlic, salt and pepper to food processor.
  2. Blend until smooth.
  3. Drizzle in olive oil while blending until just combined.
  4. Place dressing in tightly sealed container. Chill until ready for use.
  5. Cook bacon until cooked through and crispy. Cut into bite sized squares.
  6. Cut cherry tomatoes in half.
  7. Cut lettuce into bite sized squares.
  8. Pile bacon and lettuce between two cherry tomato halves. Pierce with toothpick.
  9. Continue steps above to complete each mini BLT bite.
  10. Drizzle dressing over each mini BLT bite. Serve.
